Gloriously green, full of plants, easy to meal prep. I suggest doubling up and freezing the extra portions for emergency days!
Ingredients
Ingredients:
One medium head of broccoli, chopped in the florets, stalk and all
4 cloves grated garlic
Finger sized piece of fresh ginger, grated
1 tsp ground coriander
1 tsp ground cumin
400g white beans + their juice (I used cannellini)
500ml veg stock
150g frozen peas
200g fresh spinach
Large handful of fresh basil
1 tbsp nooch
Juice of half a lemon
To serve:
Yoghurt or cream, crispy kale and pickled radish (optional)
Instructions
Cover a heavy bottomed saucepan in olive oil, then fry the broccoli and the chopped stalks until bright green (about 6-7 mins) Add the garlic, ginger and fry for 2 mins more, then add the spices.
Add the beans, their juices, the stock and stir well. Simmer on a low/medium heat whilst you blanch the spinach, basil and peas. Add them to the rest of the soup, along with the nooch and lemon, then puree in a blender. Season to taste, serve with the optional toppings.
